Okay, here’s my attempt at the “French Onion Soup Rice” blog post:
So, I saw this thing going around online about making rice with, like, French onion soup vibes. I’m a sucker for anything cheesy and carby, so I figured, why not give it a shot? I mean, how bad could it be, right?
Getting Started
First things first, I grabbed a big ol’ onion and sliced that sucker up. Not gonna lie, my eyes were watering like crazy. Pro tip: maybe light a candle or something beforehand. I tossed the onions into a pot with a good chunk of butter and let them do their thing over medium heat. You gotta let them caramelize, which takes a while, but it’s super important for that deep, rich flavor. I was a little impatient at first, I had to keep myself from cranking up the heat. But just take your time.

While the onions were getting all sweet and golden, I measured out some rice. I went with plain white rice because that’s what I had, but you could probably use brown rice or something fancier if you’re feeling it. I also prepped some beef broth. I just used the store-bought kind, but I bet homemade would be even better.
Putting It All Together
Once the onions were nice and caramelized – we’re talking a good 45 minutes here – I added the rice and beef broth to the pot. I also threw in some dried thyme and a bay leaf, ’cause that’s what the recipe I found said to do. I gave it a good stir, brought it to a boil, then reduced the heat to low, covered the pot, and let it simmer.
I think it took about 20 minutes for the rice to cook through and the liquid to absorb. The whole house smelled amazing at this point. Like, seriously, my mouth was watering just waiting for this stuff.
The Final Touch
Okay, here’s where it gets really good. I transferred the rice to an oven-safe dish. Then I topped it with a whole bunch of grated Gruyère cheese. I mean, you gotta have that melty, gooey cheese action, right? I popped the dish under the broiler for a few minutes, just until the cheese was all bubbly and golden brown.
The Verdict
Guys, this stuff was seriously good. Like, surprisingly good. The rice was all flavorful and infused with that sweet oniony goodness, and the cheese on top was just perfect. It’s definitely going into my regular rotation. This is a good one to try. I was worried it wouldn’t be filling enough, but this is one hearty meal, for sure.
- Would I make it again? Heck yeah!
- Was it easy? Super easy, just a bit time-consuming with the onion caramelization.
- Would I change anything? Maybe add some mushrooms next time for extra umami. Or, switch up the cheese!
