Okay, so I’ve been seeing this Trader Joe’s Lemon Rosemary Chicken all over my TikTok, and I finally decided to give it a shot. I mean, lemon and rosemary? Sounds pretty bomb, right?

First things first, I grabbed my keys and headed over to Trader Joe’s. I found the chicken in the refrigerated section, already marinated and everything. Super convenient! It was like, I don’t know, $6 or $7? Not bad at all.

Getting Started

  • Preheat that oven! I set mine to 400 degrees Fahrenheit, just like the package said.
  • I also grabbed my trusty baking dish that I had previously bought.

The Cooking Process

I took the chicken out of the package and placed it in the baking dish. The marinade smelled amazing, I have to say. I didn’t add anything else – no extra oil, no seasonings, nothing. I just popped it straight into the oven.

The package recommended cooking for about 30-40 minutes, or until the internal temperature reaches 165°F. I actually have a kitchen thermometer from my mom, a little bit old but still available, So I used that to make sure it was cooked through.

While the chicken was baking, I decided to make some roasted potatoes to go with it. I just chopped up some potatoes, tossed them with a little olive oil, salt, and pepper, and threw them in the oven alongside the chicken.

The Final Result

After about 35 minutes, the chicken looked golden brown and crispy, and the thermometer read 165°F. Perfect! I pulled it out of the oven and let it rest for a few minutes before slicing into it.

Honestly, it was delicious! The chicken was super juicy and flavorful, and the lemon and rosemary were a perfect match. The skin was nice and crispy, too. And with the roasted potatoes? Seriously, such a simple and satisfying meal. I’ll probably make a simple salad next time, for a green and healthy meal.

I’m definitely adding this to my regular dinner rotation. It’s easy, affordable, and tastes like you spent way more time on it than you actually did. Win-win!
