Okay, here’s my blog post about making strawberry and cream cheese muffins:
So, I’ve been on this huge muffin kick lately. And what’s better than a basic muffin? One that’s stuffed with cream cheese and bursting with fresh strawberries! I jumped into this recipe the other day, and let me tell you, it was a delicious adventure.
Getting Started
First things first, I grabbed all my ingredients. You know, the usual suspects: flour, sugar, baking powder, salt… the dry stuff. Then, the wet ingredients: eggs, milk, melted butter (because butter makes everything better, right?), and a splash of vanilla extract. And of course, the stars of the show: fresh, juicy strawberries and a block of cream cheese. I made sure it is softened up. I did not want any lumps!

Mixing It Up
I started by whisking together all the dry ingredients in a big bowl. Make sure that there are no clumps.
Then, in a separate bowl, I mixed up the wet ingredients. Nice and smooth.
Then it was a gently fold the wet ingredients into the dry ones. This needed be done very carefully. Overmixing is a big no-no with muffins; you want them tender, not tough.
Next, I chopped up those beautiful strawberries and gently stirred them into the batter. I also cut the softened cream cheese into little cubes. I could use a cream cheese filling. But, this way is much easier for me.
The Assembly Line
I greased up my muffin tin – gotta prevent sticking! Then I scooped a bit of batter into each cup, dropped in a few cream cheese cubes, and topped it off with more batter and a few extra strawberry pieces for good measure.
Bake and Enjoy
Into the oven they went! I baked them at around 375°F (that’s about 190°C for my friends across the pond) for about 20-25 minutes. The smell filling my kitchen was heavenly – sweet, buttery, and fruity. You know they’re done when a toothpick inserted into the center comes out clean, or with just a few moist crumbs.
I let them cool in the tin for a few minutes before transferring them to a wire rack to cool completely. It was so hard to resist, but I managed to wait (mostly!).
The Final Result
These muffins were amazing! They’re moist, fluffy, and packed with flavor. The tangy cream cheese perfectly complements the sweetness of the strawberries. Seriously, I could eat these every day.
