Okay, here is my sharing about the frozen burrito casserole:

So, the other day I was staring into my freezer, trying to figure out what to make for dinner. I had a bunch of those frozen burritos lying around – you know, the cheap ones you grab when you’re feeling lazy. And I thought, “There’s gotta be a way to make these things taste better.” That’s when it hit me: frozen burrito casserole!

First, I grabbed a baking dish, just a regular 9×13 one. Then I took those frozen burritos, still wrapped in their little paper sleeves, and lined them up in the dish. I managed to squeeze in about eight of them, but it depends on the size of your burritos and your dish.

Next up, the sauce. I didn’t want anything too fancy, so I just opened a can of enchilada sauce – the red kind. You can use green if you like, but I’m a red sauce kinda guy. I poured that sauce all over the burritos, making sure they were all good and coated. I also added some water to the sauce.

Now, for the cheesy goodness. I had a bag of shredded cheddar cheese in the fridge, so I sprinkled a generous amount on top of the sauce-covered burritos. Don’t be shy with the cheese, folks. The more, the merrier.

The Baking Part

  • Preheat your oven to 375 degrees Fahrenheit.
  • Cover the dish with foil.
  • Bake for about 30 minutes, then remove the foil.
  • Bake for another 15-20 minutes, until the cheese is all bubbly and melted.

While it was baking, I chopped up some onions and cilantro. Once the casserole was done, I let it cool for a few minutes, then topped it with the onions, cilantro. You can also add some sour cream or guacamole if you’re feeling extra.

Let me tell you, this frozen burrito casserole was a game-changer. It’s an easy, cheap, and delicious way to transform those boring frozen burritos into something special. My kids loved it too. Give it a try, and let me know what you think!
