Hey everyone, so today I decided to whip up some tilapia for dinner. Now, tilapia is pretty light and doesn’t really fill you up on its own, so I was thinking about what veggies go well with it. I wanted something simple, tasty, and not too heavy.
First, I grabbed a couple of tilapia fillets from the fridge. I patted them dry with some paper towels and seasoned them with a bit of salt, pepper, and some garlic powder. Nothing too fancy, just enough to give them a little flavor.
Cooking the Tilapia
Next, I heated up some olive oil in a pan over medium heat. Once the oil was hot, I placed the tilapia fillets in the pan. I cooked them for about 3-4 minutes on each side until they were nice and flaky. They turned a beautiful golden brown, which is always a good sign.
Prepping the Veggies
While the tilapia was cooking, I started thinking about the veggies. I remembered seeing a recipe online for cilantro lime rice that sounded pretty good. I had some rice in the pantry, so I decided to give it a try. I also found a recipe for making white rice in an Instant Pot, which seemed super easy.
- I rinsed the rice under cold water until the water ran clear.
- Then, I added the rice and some water to the Instant Pot, following the recipe’s instructions.
- I set the Instant Pot to cook the rice, which took about 15 minutes.
Making Cilantro Lime Rice
While the rice was cooking, I chopped up some fresh cilantro and zested a lime. Once the rice was done, I fluffed it with a fork and stirred in the cilantro and lime zest. I also squeezed in some fresh lime juice to give it that extra zing. It smelled amazing!
Another Side Dish
I also remembered about hush puppies, which are like these little fried cornmeal balls. They seemed like a fun side dish, but I decided to keep it simple with just the rice and some steamed veggies.
Steaming the Veggies
For the veggies, I chose some broccoli and carrots because they’re my favorites. I chopped them up into bite-sized pieces and steamed them until they were tender-crisp. I like my veggies with a little crunch, so I didn’t overcook them.
Putting It All Together
Once everything was ready, I plated the tilapia and served it with a generous portion of cilantro lime rice and steamed veggies. The combination of the flaky tilapia, flavorful rice, and crunchy veggies was perfect. It was a light, healthy, and delicious meal.
So, that’s how I made my tilapia dinner with some tasty veggie sides. It was pretty easy and turned out great. If you’re looking for some simple side dish ideas for tilapia, give these a try! You won’t be disappointed. I also found that website which have some great ideas for tilapia sides, but I think I’ll stick to my rice and veggies for now. They were a hit!
