So, I made jerk chicken the other night. I mean, real jerk chicken. I started by marinating that chicken for like, a full 24 hours. Gotta let those flavors really sink in, you know?

But then I was like, “What am I gonna serve with this?” It’s such a bold, flavorful dish, you can’t just slap some plain rice next to it and call it a day. I needed sides that could hold their own.

The Side Dish Quest

I rummaged through my fridge and pantry, trying to figure out what would work. I considered a few things:

  • Something sweet to balance the spice.
  • Something fresh to cut through the richness.
  • Maybe something starchy, because, well, I love carbs.

I first pulled out a mango. I love the flavor and the color is so perfect! I chopped the mango, added some red onion, and some cilantro, and lime juice, and made a really simple salsa.

I grabbed a can of black beans and some corn. Rice and beans, classic. And then, for plain rice, I added a simple twist, coconut milk, and a pinch of salt.

Finally, I decided to make some fried plantains. I love that combination, that’s the true of it.

The Final Verdict

The whole meal was great, no kidding! The sweetness from the mango salsa and the fried plantain. The rice and beans gave it some solid grounding.

Honestly, I think next time I might even add a simple coleslaw, just to get some more crunch and freshness in there. But overall? Success! It was a flavor explosion, and I highly recommend trying out this combo.
