Okay, so today I tried out this chicken and noodles over mashed potatoes thing. I saw some stuff online about it, and it sounded pretty good, like real comfort food. So I thought, why not give it a shot?
Getting Started
First off, I grabbed a couple of chicken breasts from the fridge. I just boiled them in a pot with some water and a bit of salt. Nothing fancy, just wanted them cooked through. While the chicken was doing its thing, I got started on the egg noodles. I used a bag of wide egg noodles, threw them into another pot of boiling water, and cooked them until they were nice and tender. I kept tasting them just to make sure they got to that nice not-too-hard, not-too-soft stage.
Mashed Potatoes Time
While the noodles and chicken were cooking, I peeled some potatoes and cut them into chunks. I boiled those until they were super soft, then mashed them up with a bit of butter and milk. I like my mashed potatoes creamy, so I made sure they were really smooth. Oh, and I added a pinch of salt and pepper to taste, but not too much since I wanted the chicken and noodles to shine through.

Putting It All Together
Once the chicken was cooked, I took it out of the pot and shredded it with two forks. It was pretty easy since it was nice and tender. I saved a bit of the chicken broth ’cause I figured it might be good for adding some flavor later.
Then, it was all about bringing it together. I put a good scoop of those creamy mashed potatoes on each plate. After that, I spooned the shredded chicken and cooked noodles over the mashed potatoes.
Finishing Touches
To finish it off, I poured a little bit of that chicken broth I saved over the top. Not too much, just enough to moisten everything and give it some extra flavor. And of course, I sprinkled a little salt and pepper over the whole thing, to taste.
Honestly, it turned out pretty darn good! The chicken was tender, the noodles were just right, and the mashed potatoes were the perfect base. It was like a big, warm hug on a plate. And it was super easy to make, which is always a plus in my book. I’d definitely make this again, maybe even try adding some veggies next time.
