Okay, so I’ve been seeing those rotisserie chickens at the grocery store, and they always smell SO good. I finally decided to grab one and figure out some different ways to use it, besides just, you know, eating it straight up (which is also totally fine, by the way!).

First Try: The Basic Shred

First thing I did was pull all the meat off the bone. It was still pretty warm, so it came off super easy. I just used my hands, but you could totally use two forks if you’re fancier than me. I got a ton of meat. Like, way more than I expected.

I separated some of the white meat and some of the dark meat, because, you know, preferences. And, I may or may not have snacked on a few pieces while I was doing this. Quality control, right?

Meal 1: Chicken Salad Sandwiches

Okay, this is a classic. I took some of the shredded chicken, added some mayo (I like the kind with olive oil), a little bit of celery I chopped up real fine, and some salt and pepper. Seriously, that’s it. I mixed it all up, tasted it to make sure it was good (more quality control!), and then slapped it on some bread.

Pro-tip: Toast the bread. It makes it so much better.

Meal 2: Quick Chicken Tacos

Taco night is always a win. I warmed up some of the shredded chicken in a pan with a little bit of taco seasoning (the packet kind, because I’m all about easy). Then I just loaded up some tortillas with the chicken, some shredded cheese, salsa, and a dollop of sour cream. Boom. Dinner.

Meal 3: Chicken & Veggie Bowls

I am trying to eat more healthy.

I am cook some brown rice, and when I am ready, I try to roasted some broccoli and sweet potatoes in the oven. Once everything was cooked, I just tossed it all together in a bowl with some of the leftover shredded chicken.

I added that I drizzled a little bit of balsamic vinaigrette on top. It was pretty good, I added more vegetables as I need.

The Leftovers

I have some chickens left, I put that into container and put in fridge. I think that’s great for next time!.

Honestly, getting a rotisserie chicken is a game-changer. It’s so easy, and you can get so many different meals out of it. I’m definitely going to be doing this again.
