Best Blue Vegetables to Eat: Simple Guide to These Unique Veggies.

Today, I wanted to try something new in the kitchen, so I decided to cook up some blue vegetables. I’d heard about them but never actually tried to cook any before. It sounded kind of fun and different, right?

Getting Started

First, I had to find these blue vegetables. I went to the grocery store and there were a ton of vegetables, but honestly, not a lot of blue ones. I found some purple potatoes and some purple cabbage. They looked kind of blue-ish, so I grabbed them. I also picked up some blueberries because, well, they’re definitely blue, even though I wouldn’t really call them a vegetable.

The Cooking Process

I got home and started with the purple potatoes. I washed them and chopped them into little chunks. I figured I’d roast them in the oven. So, I tossed them with some oil, salt, and pepper, and threw them into a preheated oven. I set the timer and moved on to the cabbage.

The purple cabbage was next. I sliced it thinly, thinking I’d make a slaw. I mixed it with some mayonnaise, a little bit of vinegar, and some sugar. It looked pretty, with the purple color and all.

For the blueberries, I was a bit stumped. I ended up just rinsing them and putting them in a bowl. Maybe I could use them as a side, or a dessert, I thought. They were kind of an afterthought.

How Did It Turn Out?

  • Purple Potatoes: They came out of the oven looking pretty good. They were crispy on the outside and soft on the inside. They tasted like regular potatoes, but the color made them a bit more interesting.
  • Purple Cabbage Slaw: The slaw was crunchy and had a nice tangy flavor. The color was really vibrant. It was a good side dish, for sure.
  • Blueberries: They were just blueberries. Sweet and juicy. They didn’t really fit with the other stuff, but they were a nice, healthy snack.

Overall, it was a fun experiment. The blue vegetables were more purple than blue, but it was cool to try something different. I don’t know if I’d make them all the time, but it was a good change of pace. Maybe next time I’ll find some actually blue vegetables, if those even exist. Who knows? It was a good time in the kitchen, and that’s what counts, right?
