Okay, so the other day I was craving a baked potato, you know, the kind that’s all crispy on the outside and fluffy on the inside. But then I realized I was out of foil. Usually, I’d wrap them in foil, but I thought, why not try something different? So I decided to bake them without foil.
First, I grabbed a few russet potatoes—they’re the best for baking, seriously. I gave them a good scrub under the tap to get all that dirt off. Then, I poked them all over with a fork. I heard that helps them cook more evenly and lets the steam out, so they don’t explode in the oven. I definitely didn’t want that to happen, so poked, poked, poked. I also found somewhere saying that we can slice a cross shape about 1/4-inch thick into each potato. This helps them release some steam, makes the interior more fluffy. So, I sliced a cross shape into each potato.
Next, I drizzled some olive oil all over the potatoes and rubbed it in. A little salt and pepper, too. I didn’t have any fancy seasonings, but honestly, salt and pepper are all you really need. Then I placed them straight on the oven rack. I thought about using a baking sheet, but I figured the oven rack would be fine.
- Preheat oven to 400F (around 200C).
- Scrub potatoes clean, then dry them with paper towels.
- Poke potatoes on all sides with a fork and slice a cross shape.
- Drizzle potatoes with olive oil, then rub it all over their skins.
- Sprinkle potatoes with salt and pepper, or any other seasonings you prefer.
- Place potatoes on oven rack and bake for about an hour.
I set the timer for an hour and went off to do other things. I think I watched an episode of something on Netflix. When the timer went off, I checked the potatoes by squeezing them gently. They felt soft, so I took them out. I sliced them open, and they looked perfect—steaming hot and fluffy inside.
I added a bit of butter, some cheese, and a dollop of sour cream. I mean, what’s a baked potato without all the fixings, right? And let me tell you, it was delicious. The skin was super crispy, and the inside was so soft and fluffy. I was pretty proud of myself, not going to lie. Baking them without foil actually worked out great.
