Okay, so today I decided to try out this “rotel pasta” thing I’ve been seeing all over the internet. It looked simple enough, and I was craving something cheesy and comforting. Here’s how it went down:
Gathering the Goods
First, I grabbed all the ingredients. I already had most of it, which was a bonus. Here’s the list:
- Pasta (I used rotini because it looked fun)
- A can of Rotel (tomatoes and green chilies – I went with the original)
- Velveeta cheese (yup, the processed stuff, don’t judge)
- Ground beef (I had some in the freezer)
- Taco seasoning (because why not?)
- Milk (just a splash)
Cookin’ Time
I started by browning the ground beef in a big pan. While that was going, I put a pot of water on to boil for the pasta. Once the beef was cooked, I drained off the extra grease and sprinkled in the taco seasoning. Gave it a good stir to get everything coated.

Next, I dumped in the can of Rotel, juice and all. No need to drain that. I let it simmer for a bit, just to get the flavors mingling.
By this time, the water was boiling, so I threw in the pasta and cooked it according to the package directions. Don’t overcook it, nobody likes mushy pasta!
Cheese, Please!
Now for the best part. I cut the Velveeta into cubes – makes it melt faster, you know. I tossed the cheese into the pan with the beef and Rotel. Then I poured in a splash of milk, just to help things get smooth and creamy.
I stirred everything together, keeping the heat on low, until the cheese was completely melted and everything was nice and gooey. It smelled amazing!
Bringing It All Together
Once the pasta was done, I drained it and added it to the cheesy, meaty goodness in the pan. I mixed it all up, making sure every piece of pasta was coated in that delicious sauce.
The Final Result
And that’s it! I scooped myself a big bowl and dug in. It was super cheesy, with a little kick from the Rotel and the taco seasoning. Honestly, it was exactly what I was hoping for – total comfort food. It’s definitely something I’ll make again, maybe next time I’ll add some extra veggies or try different cheeses. Easy, peasy, and delicious!
