Slow Cooker Hobo Casserole Easy Recipe (Make Dinner a Breeze!)

Okay, so today I decided to tackle a recipe I’d seen floating around online: the Slow Cooker Hobo Casserole. It sounded super easy and, honestly, kinda fun – the name alone got me! I love a good one-pot meal, and my slow cooker is my best friend, so I figured, why not?

Getting Started

First things first, I gathered my ingredients. I already had most of it on hand, which is always a bonus. I’m talking:

  • Ground beef (I used about a pound)
  • A couple of potatoes, diced up
  • Some carrots, also diced
  • An onion, chopped
  • A can of corn (drained, of course)
  • A can of beans (I went with kidney beans)
  • A can of condensed cream of mushroom soup
  • Some salt, pepper, and whatever other seasonings I felt like throwing in

The Prep Work (Barely Any!)

Seriously, this is where the “easy” part really shines. I browned the ground beef in a pan, just to get some of that extra fat out. While that was going, I tossed the potatoes, carrots, and onion into my slow cooker.

Once the beef was cooked, I drained the grease and dumped it on top of the veggies. Then, I added the corn, beans, and cream of mushroom soup. I gave it all a good stir, making sure everything was nicely mixed together.

I threw in a little salt and a good amount of pepper. Oh, and some garlic powder cause…I add garlic powder to most of things.

Slow Cooker Magic

I put the lid on the slow cooker, set it to low, and…walked away. That’s the beauty of slow cookers, right? I let it do its thing for about 6 hours. I think you could probably do it on high for like 3-4 hours, but I wasn’t in a rush.

The Final Result

After 6 hours, I lifted the lid and, oh man, it smelled amazing! Everything was cooked through, the potatoes were soft, and the sauce was nice and thick. I gave it another good stir and served it up.

It was a pretty perfect comfort food. Super hearty, filling, and flavorful. The kids even liked it, which is always a win in my book. Would I make it again? Absolutely. It’s cheap, easy, and tastes good. What more could you want?
