This here soup, it’s a good one. My grandbaby, bless her heart, she can’t eat just anything. Gets a tummy ache somethin’ fierce. So, I gotta be careful, you see? No gluten, no dairy. Sounds like a real pain, right? But this here gluten free dairy free cream of mushroom soup, it ain’t so bad to make. Easier than chasing chickens, I tell ya!

First, you gotta get your mushrooms. Any kind will do, but I like them little brown ones. Chop ’em up, not too fine, not too big. Like you’re choppin’ onions for a stew, you know? Then you need some oil. I use that olive oil, the one they say is good for your heart. Heat that up in a big ol’ pot. Not too hot, now, don’t want to burn nothin’.

Throw them chopped mushrooms in the pot with the hot oil. Stir ’em around a bit. Let ’em get all soft and juicy. Smells good, don’t it? Like a walk in the woods after a rain. Now, some folks like to put onions and garlic in there too. I do sometimes, when I got ’em. Chop ’em up real fine and toss ’em in with the mushrooms. Makes it even tastier.

Now, for the “cream” part. Since we ain’t usin’ real cream, we gotta get creative. I use that coconut milk, the one in the can. The thick kind, not the watery stuff. Pour that in the pot with the mushrooms. Stir it all up good. It won’t look like much, not like real cream of mushroom, you know. But don’t you worry, the taste will be there.

You can put some broth in there too. Makes it more, you know, soupy. I use that vegetable broth, the one in the box. Chicken broth works too, if that’s what you got. Just pour some in, not too much. You don’t want it to be too watery, it is cream of mushroom soup after all. Don’t forget that. Just enough to make it all nice and smooth. Now we’re gettin’ somewhere, huh?

Let that whole thing simmer for a bit. Low heat, now. You don’t want it boilin’ over and makin’ a mess. Just let it all cook together nice and slow. Like a good story, it takes time to get to the good part. You can add some salt and pepper, too. Just a pinch, though. Don’t want it too salty.

  • Mushrooms, chopped
  • Oil, for cooking
  • Coconut milk, full-fat
  • Vegetable or chicken broth
  • Salt and pepper, to taste
  • Maybe some onions and garlic, if you like

After a while, it’ll start to thicken up a bit. That’s what you want. If it’s still too thin, you can use a little somethin’ to thicken it up. I use that cornstarch. Mix a little bit with some cold water in a cup, then pour it into the soup. Stir it good, and it’ll thicken right up. Don’t put too much cornstarch, or else you will be eating paste. Nobody wants that. This ain’t wallpaper paste. It is a delicious soup.

And that’s it! You got yourself a pot of gluten free dairy free cream of mushroom soup. It ain’t fancy, but it’s good. And it won’t make my grandbaby sick, which is the important thing. You can eat it just like that, or you can put some other stuff in it. Some folks like to add cooked chicken or rice. I even heard of people puttin’ potatoes in there. Whatever floats your boat, I reckon. It is a very easy soup to make, that is the important part.

This soup, it reminds me of when I was a little girl. We didn’t have much, but we always had good food. My mama, she could make a meal out of anything. She’d make a big pot of soup like this, and it would feed the whole family. We’d sit around the table, eatin’ and talkin’. Good times, those were. Simpler times.

Now, I ain’t sayin’ this soup is gonna take you back to the good ol’ days. But maybe, just maybe, it’ll remind you of somethin’ good. A warm hug on a cold day. A friendly face in a crowd. A little bit of comfort in a world that’s often too busy and too loud. That is why you need this gluten and dairy free soup.

So go on, give it a try. This gluten free dairy free cream of mushroom soup ain’t hard to make, and it’s good for you, too. Even if you can eat anything, you might just like it. It is better than anything you will buy from the store, that is for sure. And if you got a grandbaby with a sensitive tummy, well, you’ll be a hero. Just like me. A hero with a pot of soup. That is all we want sometimes. A nice, simple, home cooked meal.
