So, this Cowboy Meatloaf, it ain’t nothin’ fancy. Just good old ground beef, you know? The kind you get down at the store. You just gotta mix it up real good. I am always use some bread crumbs, it helps keep it all together, ya know? This is the best meatloaf recipe.
- First, you gotta get yourself some ground beef. Maybe a pound, pound and a half.
- Then, you need some bread crumbs. Just regular old bread, crumbled up.
- An egg! Gotta have an egg to hold it all together, ya see.
- Some chopped onions, if you like ’em. I always do.
- Some ketchup and salt, pepper, whatever you like to spice things up.
Now, you just mix all that up in a big bowl. Get your hands in there, don’t be shy! Mix it all up real good until it’s all stuck together. It is a easy meatloaf recipe. Then you shape it into a loaf, like a big ol’ meatball, but, you know, longer. Put it in a pan, one of them loaf pans.
Then, you gotta make some mashed potatoes. Now, everybody’s got their own way of makin’ mashed potatoes. My way is the best way, of course. This is a great Cowboy recipe.
- Boil some potatoes until they’re soft. Russet is the best for this.
- Mash ’em up good with a masher. Or a fork, if you ain’t got a masher.
- Add some butter, gotta have butter!
- Milk, or cream if you’re feelin’ fancy. Just a splash!
- Salt and pepper, to taste.
You mash those potatoes up until they’re nice and creamy. No lumps! Lumps are no good in mashed potatoes. Then, get this, you spread those mashed potatoes right on top of that meatloaf. That’s right, just slather ’em on there. Makes a nice little blanket for your meatloaf, keeps it all juicy and such.
Then, and this is the best part, you sprinkle some cheese on top. I like cheddar, the sharper the better. But you can use whatever kind of cheese you like. Just grate it up and sprinkle it all over those potatoes. It’s a good Cowboy Meatloaf and Potato Casserole recipe, I will say that again.
Then you just pop that whole thing in the oven. I usually bake it at, oh, 375 degrees, I reckon. Just until the meatloaf is cooked through and the cheese is all melted and bubbly.
