Okay, so I’ve been on this huge “no dairy” kick lately, and let me tell you, finding good ice cream alternatives is HARD. But then I got a Ninja Creami, and oh boy, game changer! I wanted to try making a simple vanilla ice cream, but obviously, without any milk or cream. Here’s how it went down:
Getting Started
First, I needed a recipe. I played around with a few, and I found the best is a super simple one.
- 1 can (13.5 oz) of full-fat coconut milk. I tried the “lite” stuff once, and it was a disaster. Don’t do it! It’s too watery. Full-fat is your friend for a creamy texture!
- 1/2 cup of granulated sugar.
- 1 teaspoon of pure vanilla extract, not too much.
- 1/4 teaspoon of salt, this enhances the sweetness.
Mixing it All Up
I poured the can of coconut milk into a bowl.

I then added the sugar, vanilla extract, and salt.
And I whisked everything together until the sugar was totally dissolved. No gritty bits allowed! This took a good few minutes of whisking, so don’t be lazy. You want it smooth.
The Waiting Game (Ugh)
Next, I poured the mixture into the Ninja Creami pint container. Now comes the hard part: the freezing. I popped the lid on and stuck it in the freezer. It needs to freeze solid, which, according to the instructions, is about 24 hours. Seriously, the waiting is the worst part!
Creami Time!
After a full day of anxiously checking the freezer every hour, I get out the pint out.
I put the pint into the outer bowl, put on the blade, and lock the lid. I put the outer bowl with the pint into the machine. I selected the “ice cream” * Creami did its thing, spinning and whirring away. I pressed “Re-spin” once after it stopped for a better textrue.
The Moment of Truth
Finally, I opened it up, and there it was: dairy-free vanilla ice cream! It wasn’t exactly like regular ice cream, but it was surprisingly close! It was creamy, sweet, and had a nice vanilla flavor. The coconut flavor was there, but it was subtle and actually kinda nice.
I scooped some into a bowl and might have added some chocolate chips (don’t judge). It was a total win! It is not perfect but, definitely worth making again. Next time, I might try adding some other flavors, maybe some fruit or even some cocoa powder. The possibilities are endless!
