Alright, guys, so I had a ton of leftover pork tenderloin from last night’s dinner, and I’m not one to waste food. So, I decided to make these awesome sandwiches, and let me tell you, they turned out amazing! I just had to share the whole experience with y’all.
First, I gathered all the stuff I needed. I had the leftover pork tenderloin, of course, which was already cooked and nicely seasoned. Then I grabbed some bread. I just used regular sandwich bread from my favorite grocery store, but you could totally use hoagie rolls or something fancier if you’re feeling it. I also found some cheese slices in my fridge, some lettuce, tomatoes, and onions. And, of course, I got my favorite condiments ready: mayo and mustard.
Next, I started slicing the pork tenderloin. I aimed for thin slices because I wanted them to stack up nicely in the sandwich. It was super easy since the pork was already cooked and pretty tender. Then I sliced up the tomatoes and onions as thin as I could. I like my veggies thinly sliced in sandwiches, you know? Makes it easier to bite into.

Now, for the assembly part! I laid out the bread slices and spread a thin layer of mayo on one side and mustard on the other. I’m a fan of both, so I used both! If you have a favorite, just use that. Then I started layering the ingredients. First, a slice of cheese, then a good pile of that yummy pork tenderloin, followed by lettuce, tomato, and onion. I topped it off with another slice of cheese because, well, why not? Cheese makes everything better.
I put the top slice of bread on, and there it was! A pretty good-looking sandwich, if I do say so myself. But I wanted to take it up a notch, so I decided to grill it. I heated up a bit of butter in a pan over medium heat and placed the sandwich in. I grilled it for a few minutes on each side, until the bread was golden brown and the cheese was all melty and gooey.

The pork was still juicy, the cheese was perfectly melted, and the veggies added a nice crunch. The grilled bread gave it that extra bit of flavor and texture that just made the whole thing amazing.
It was such a simple way to use up leftovers, and it turned out to be one of the best sandwiches I’ve had in a while. If you guys have leftover pork tenderloin, you gotta try this!
