Okay, so the other day I was staring into my fridge, wondering what to make for dinner. I had this tri-tip roast sitting there, and I was feeling lazy. Enter: the Instant Pot! I’ve heard people rave about cooking tri-tip in it, so I figured, why not give it a shot? Let me tell you, it turned out pretty darn good!
Getting Started
First things first, I grabbed my tri-tip, about 2.5 pounds. I patted it dry with some paper towels – gotta get that good sear, you know? Then, I mixed up a simple rub. I just threw together some salt, pepper, garlic powder, onion powder, and a little paprika. Nothing fancy, just stuff I had in the pantry. I rubbed that all over the meat, making sure to get every nook and cranny.
Sear It Up!
Next, I set my Instant Pot to “Sauté” mode. Once it was hot, I added a glug of olive oil. I carefully placed the tri-tip in there and seared it for about 3-4 minutes per side. You want a nice brown crust – that’s where the flavor is! Don’t skip this step, seriously.

Pressure Cooking Time
After searing, I took out the tri-tip and poured in about a cup of beef broth. I also added a splash of Worcestershire sauce, because, why not? Then, I put the trivet in the Instant Pot and placed the tri-tip on top. I sealed the lid, set it to “Pressure Cook” on high for 25 minutes. Don’t forget to set the valve as “Sealing”.
The Waiting Game (and Natural Release)
Once it was done cooking, I let the pressure release naturally for about 15 minutes. This is important for keeping the meat juicy! After that, I did a quick release to get rid of the remaining pressure.
The Final Touch
I carefully removed the tri-tip and let it rest for about 10 minutes before slicing. This is crucial, people! Resting lets the juices redistribute, so you get a more tender and flavorful result. I sliced it against the grain – you gotta do that with tri-tip – and served it up with some roasted veggies. It was seriously delicious!
Overall, I was super impressed with how easy and tasty this Instant Pot tri-tip turned out. Definitely adding this to my regular rotation!
