Okay, so I tried making these oatmeal walnut chocolate chip cookies the other day, and let me tell you, the whole process was a bit of a journey, but so worth it in the end!
I started by gathering all my ingredients. Now, I didn’t have any fancy types of chocolate chips on hand, just the regular ones, but I figured they’d do just fine. The recipe I was kinda sorta following mentioned using both milk and white chocolate chips, but I just stuck with what I had. That’s the beauty of baking, right? You can always improvise a little! I also grabbed my walnuts, flour, and all the other usual suspects like butter, sugar, eggs, and such. Oh, and the oatmeal, can’t forget that! It was just regular rolled oats, nothing special. I thought about grinding some stuff into flour, but nah, I didn’t want to get all experimental and mess things up. There was this mention of using a food processor somewhere, but I decided to keep it simple and do it the old fashioned way.
Mixing It All Up
So, first things first, I creamed together the butter and sugar. I just used my trusty hand mixer for this, you can use a stand mixer if you are fancy, but hey, this works too! Then, I beat in the eggs one at a time. After that, it was time for the dry ingredients. I slowly added in the flour, baking soda, and salt, mixing until everything was just combined. Don’t overmix, guys! That’s a rookie mistake.

Then came the best part – adding in the oatmeal, walnuts, and chocolate chips! I just dumped them all in and gave it a good stir. The dough was looking pretty thick and delicious at this point. I might have snuck a little taste… or two. Quality control, you know?
Baking Time
- I preheated my oven to 375 degrees.
- Then I lined my baking sheets with some parchment paper.
I decided to use my cookie scoop to drop the dough on the cookie sheet. You don’t need to do this, just spooning the dough out is fine, but using the cookie scoop makes it easier and the cookies come out more uniform.
I popped them in the oven and waited. The recipe said to bake for about 10-12 minutes, but I always like to keep a close eye on them. My oven can be a bit temperamental, you see. Plus, I prefer my cookies a little on the softer side. So after about 11 minutes
