Alright, folks, gather ’round! Today, I’m gonna share my little adventure making Mexican wedding cookies, but hold up, no nuts allowed! Yeah, you heard that right, nut-free!
First things first, I grabbed all the stuff I needed. Since we’re ditching the nuts, I made sure I had plenty of flour. I mean, you can’t have cookies without flour, right? And obviously, butter, sugar, and some vanilla extract, ’cause what’s a cookie without that sweet, sweet vanilla?
So, I started by creaming the butter and sugar together. I just threw them in my trusty old mixer and let it do its thing until it was all light and fluffy. Then, I cracked in an egg and poured in that vanilla extract. I tell ya, the smell was already making my mouth water.

Into the oven they went, at 350 degrees Fahrenheit. I set the timer for about 10-12 minutes. You want them to be just lightly golden brown around the edges. Keep an eye on them, though, ’cause every oven is different.
Once they were done, I took them out of the oven and let them cool for a few minutes on the baking sheet. Then, I carefully transferred them to a wire rack to cool completely. You gotta be patient here, folks. Trust me, it’s worth the wait.
The Final Touch
While the cookies were cooling, I got some powdered sugar ready. Once the cookies were completely cool, I rolled each one in the powdered sugar until they were coated.
