Okay, so I wanted to try making some berry syrup, you know, for pancakes, waffles, or even just to drizzle over ice cream. I had a bunch of frozen mixed berries in the freezer, so I thought, why not use those? Here’s how I did it.

First, I grabbed my bag of frozen mixed berries. I didn’t thaw them or anything, just straight from the freezer into a saucepan. I threw in about two cups of berries, but you can totally adjust this based on how much syrup you need.

Next, I added some sugar. I used about half a cup of granulated sugar. I like my syrup on the sweeter side. If you want it less sweet, you can use a bit less sugar, maybe a quarter cup or even less. It’s all up to your taste!

Then, I poured in about a quarter cup of water. The water helps to get things going and dissolve the sugar, you see.

I put the saucepan on the stove over medium heat. I stirred everything together to make sure the sugar was starting to dissolve. I didn’t want it to stick to the bottom and burn.

I kept an eye on the mixture and stirred it occasionally. As the berries started to heat up, they released their juices. It got all bubbly and the sugar melted into the juice. It was cool to watch.

I let the mixture simmer for about 10-15 minutes. It started to thicken up nicely. The longer you simmer it, the thicker it gets. I like my syrup a little runny, so I didn’t go too long.

Important Notes

  • You can strain the syrup through a fine-mesh sieve if you don’t want any seeds or berry bits in there. I personally don’t mind them, so I skipped this step.
  • The hot syrup was carefully poured into a clean jar.
  • I let the syrup cool completely before putting the lid on and storing it in the fridge. It will thicken up even more as it cools.

And that’s it! Super easy, right? Now I have some delicious homemade berry syrup made from frozen berries. I can’t wait to use it on my next batch of pancakes. Yum!

The homemade syrup can be stored in the refrigerator for up to 2 weeks.
