Okay, so this morning I was thinking, “I need a quick and easy breakfast,” and my mind went straight to eggs. But not just any eggs – I wanted that perfect, runny yolk with a slightly firm white. You know, over easy style. I’ve messed these up before, so I decided to really pay attention this time and document how I nailed it. It is all about the “nutrition in eggs over easy“.
Getting Started: The Setup
First, I grabbed my favorite non-stick pan – this is key, folks, no sticking allowed! I put it on the stove over medium-low heat. Yeah, low and slow is the way to go. I added about a teaspoon of butter. You could use oil, but butter just gives it that extra yummy flavor.
The Main Event: Cooking the Eggs
While the butter was melting, I cracked two eggs into a small bowl. Doing it in a bowl first helps prevent any shell bits from getting in the pan, and you can make sure the yolks are intact. Once the butter was all melted and the pan was nicely coated, I gently poured the eggs in.

- I made sure not to overcrowd the pan. Two eggs at a time is my max in this pan.
- Then, I just let them sit there. No touching, no poking, just letting the heat do its thing.
I watched the whites start to set around the edges. This took about 2-3 minutes, I guess. The key is to wait until the whites are mostly cooked but the yolks are still totally runny.
The Flip: The Moment of Truth
This is where things can go wrong, so I took a deep breath. I used my trusty spatula – a thin, flexible one is best – and gently slid it under one egg. Then, with a quick, confident flick of the wrist, I flipped it over.
I only let the egg cook on the second side for maybe 30 seconds, just enough to set the top of the yolk a tiny bit. You still want it super runny inside.
The Finish: Perfection on a Plate
I carefully slid the eggs onto a plate. They looked amazing – whites fully cooked, yolks bright yellow and gloriously runny. I sprinkled a little salt and pepper on top, and that was it!
I devoured those eggs with a piece of toast to soak up all that delicious yolk. Seriously, it was the perfect over easy egg. And by taking my time and paying attention to each step, I finally cracked the code(get it?)! I felt good, knowing I got a solid dose of protein and nutrients to kick off my day. Next time, I might even get a bit more adventurous with my seasonings!
