Okay, so I tried making a meatloaf with BBQ sauce the other day. I’ve made meatloaf before, but never with BBQ sauce mixed right in. Figured I’d give it a shot!

Getting Started

First, I grabbed all my ingredients. I’m talking about the usual stuff:

  • Ground beef (I used about 2 pounds)
  • An egg (to hold everything together, you know?)
  • Breadcrumbs (makes it less dense, I think)
  • Some chopped onion (because onions make everything better)
  • And, of course, the BBQ sauce! (I just used some store-bought stuff, nothing fancy)
  • A little bit of salt and pepper (gotta season it!)

Mixing It All Up

I dumped all that into a big bowl. Pro tip: Don’t overmix it! Just get it all combined. If you work it too much, the meatloaf gets tough. I used my hands, because, why not? It’s the best way to really feel if it’s all mixed up right.

Into the Pan

Then, I shaped the mixture into a loaf-ish shape and put it in a loaf pan. I didn’t grease the pan or anything, there’s enough fat in the beef usually. I actually made this loaf free form and place it directly on a backing sheet. Seemed good enough!

Bake Time!

I popped it in the oven, which I’d already preheated to 350 degrees Fahrenheit. I let it bake for, I dunno, about an hour? Maybe a little longer. You want to make sure it’s cooked all the way through. The best way to check is with a meat thermometer – it should read 160 degrees Fahrenheit in the center.

The BBQ Glaze

While it was baking, I mixed a bit more of the BBQ sauce and prepared a little glaze for top of meatloaf, you can skip this step.

About 15 minutes before it was done, I took the meatloaf out and brushed the top, and then put it back in the oven to finish cooking. This gave it a nice, sticky, BBQ-y crust.

The Final Result

Once it was cooked through, I took it out of the oven and let it rest for a few minutes before slicing it. This is important! If you cut it right away, all the juices run out and it’ll be dry. And nobody wants a dry meatloaf.

And that’s it! Served it up with some mashed potatoes and green beans. It was pretty darn good, if I do say so myself. The BBQ sauce gave it a nice, tangy flavor. Definitely doing this again!
