Okay, so I wanted to make something warm and comforting for dinner, and I thought, why not chicken noodle soup with a side of mashed potatoes? It’s like the ultimate comfort food combo, right?
Getting Started
First, I gathered all my ingredients. For the soup, I grabbed some chicken breasts, carrots, celery, onion, chicken broth, egg noodles, and some herbs like thyme and bay leaves. For the mashed potatoes, I got some potatoes, butter, milk, and a bit of salt and pepper.
Making the Soup
- I started by cooking the chicken. I just boiled them in water until they were cooked through. Took about 20 minutes. Then I took them out and shredded the meat with a couple of forks.
- While the chicken was boiling, I chopped up the carrots, celery, and onion. I like them kinda chunky, but you do you.
- Next, I dumped those veggies into a big pot with the chicken broth. I also threw in the herbs and a bit of salt and pepper. Brought that to a boil and then let it simmer for about 15 minutes, just until the veggies got tender.
- Then, I added the shredded chicken and the egg noodles. I cooked that for another 10 minutes or so, until the noodles were done.
Mashed Potatoes Time
- While the soup was doing its thing, I peeled and chopped the potatoes. I boiled them in salted water until they were super soft, like, you could easily mash them with a fork. That took about 20 minutes, too.
- Once they were cooked, I drained the water and put the potatoes back in the pot. I added a good chunk of butter, a splash of milk, and some salt and pepper.
- Then came the fun part – mashing! I just used a potato masher and mashed everything together until it was smooth and creamy. If it’s too thick, you can add more milk.
Putting It All Together
Once everything was ready, I ladled the soup into bowls and served it with a big scoop of mashed potatoes on the side. Honestly, it turned out pretty great! The soup was flavorful and the mashed potatoes were super creamy. It was the perfect meal for a chilly evening.
