Okay, so I tried making this stuffed pepper soup from *, and let me tell you, it was quite the adventure in the kitchen!
First off, I gathered all the ingredients. I already had some ground beef in the freezer, so I took that out to thaw. I always keep onions and garlic on hand cause I use them in like, everything. The recipe called for bell peppers, rice, diced tomatoes, beef broth, and some seasonings. I think I spent about 30 minutes just prepping everything – chopping the onions, mincing the garlic, and dicing those bell peppers. It felt like I was chopping forever!
Next, I browned the ground beef in a big pot. I like to use a really big pot for soups so I don’t have to worry about it boiling over. Once the beef was browned, I drained off the extra grease. Nobody wants greasy soup, right?

Then, I tossed in the onions and garlic and cooked them until they were soft. The smell of onions and garlic cooking always makes me hungry. After that, I added in the rest of the ingredients: the bell peppers, diced tomatoes, beef broth, rice, and seasonings. I gave it a good stir to make sure everything was mixed together well.
The recipe said to bring the soup to a boil and then reduce the heat and simmer for about 45 minutes, or until the rice is cooked. So, I did just that. I put the lid on the pot and let it simmer away. While it was simmering, I cleaned up the kitchen. I hate having a messy kitchen, so I always try to clean as I go.

- Add remaining ingredients
- Simmer until rice is cooked
After about 45 minutes, I checked the soup, and the rice was cooked. Finally! I ladled some into a bowl and topped it with a little bit of shredded cheese because everything is better with cheese.
I have to say, the soup turned out pretty good! It was hearty, flavorful, and perfect for a chilly evening. I will definitely be making this again. Maybe next time, I’ll try adding some different veggies or using a different type of meat. This was my first time making a soup like this.
