Okay, so, I’ve been experimenting in the kitchen again, and this time it’s with Campbell’s Cream of Jalapeno Soup. I gotta say, it turned out pretty darn good, if I do say so myself. Let me walk you through what I did.
First off, I gathered my ingredients. Obviously, I needed a can of that Campbell’s Cream of Jalapeno Soup. Then, because I like a bit of texture and extra flavor, I chopped up some onion, a carrot, and a bell pepper. And, of course, a few extra jalapenos, because why not? You gotta have some cheese, so I got some cheddar ready to go.
I started by sautéing the onion, carrot, and bell pepper in a bit of oil. Just until they were soft, you know? Then, I opened up that can of soup and poured it into the pot. Gave it all a good stir. Oh boy, I also added my extra chopped jalapenos at this point. I like it spicy, but you can totally adjust this to your own taste.

I let that simmer for a bit, just so all the flavors could get to know each other. You could smell the yummy stuff in there. While that was happening, I grated some cheddar cheese. A lot. You can tell I love cheese, right?
The Finishing Touches
- Mix it up: Once the soup was heated through and the veggies were all happy, I turned off the heat.
- Cheese, please: Then, it was time for the best part. I sprinkled a generous amount of that grated cheddar on top.
- Melt it down: I covered the pot for a minute or two, just to let that cheese melt all gooey and delicious.
And there you have it! A simple, yet seriously tasty, jazzed-up version of Campbell’s Cream of Jalapeno Soup. It was creamy, it was spicy, it was cheesy—basically, everything you want in a soup. I served it up with some crusty bread for dipping. Man, oh man, it was a hit! I will definately do this again!
I’ve heard of people using this soup as a base for other things, like mixing it with shrimp, lemon, cream cheese, and even smoked fish or sausage. That sounds pretty wild, but hey, I’m always up for a culinary adventure. Maybe I’ll try one of those next time. But for now, I’m pretty darn pleased with my souped-up soup. Get it? Souped-up?
