Okay, so I’ve been trying to eat healthier, and I keep hearing about how great cottage cheese is. I’m not a huge fan of it plain, so I went on a mission to find some tasty ways to eat it. I landed on a few recipes that involve eggs, since I always have those on hand. Here’s how it went:
First Try: Scrambled Eggs with a Twist
My first attempt was pretty simple. I just added some cottage cheese to my regular scrambled eggs.
- I whisked two eggs in a bowl with a little salt and pepper.
- Then, I heated a bit of butter in a pan.
- I poured in the eggs and let them cook for a bit, just like normal scrambled eggs.
- Once they were mostly set, I spooned in about 1/4 cup of cottage cheese.
- I stirred it all together until the cottage cheese was warm and everything was cooked through.
Honestly, it was pretty good! The cottage cheese added a nice creaminess and a little bit of tang. I think next time I’ll add some chives or maybe some hot sauce to spice it up.

Second Try: Cottage Cheese and Egg Bake
This one was a bit more involved, but still super easy. It’s kind of like a crustless quiche.
- First, I preheated my oven to 350°F (175°C).
- I greased a small baking dish.
- In a bowl, I mixed together 4 eggs, 1 cup of cottage cheese, and some salt and pepper. You could totally add other stuff here – I threw in some chopped spinach and a little bit of shredded cheddar cheese.
- I poured the mixture into the baking dish.
- I baked it for about 25-30 minutes, until it was set and a little golden brown on top.
This was also a winner! It was great hot, but I also ate some cold leftovers the next day, and it was still good. Perfect for a make-ahead breakfast.
Third Try: Fried Egg over Cottage Cheese.
I saved what I thought of as the most unquie idea for last, simply placing the fried egg on the cottage cheese.
- First, fry an egg to the degree of doneness you prefer.
- Spread Cottage Cheese on toast or rice cakes, your choice!.
- Carefully, place the fried egg on top.
The rich, runny yolk mixed with the cool, creamy cottage cheese and created a surprisingly satisfying contrast of flavors and textures. It was a winning combination that I’ll definitely be making again!
