So, I saw this recipe online the other day for Aunt Jemima pancakes, the “just add water” kind. I figured, why not give it a shot? I mean, who doesn’t love a good, fluffy pancake on a lazy Sunday morning, right?
I went and grabbed a box of the mix from the store. On the box, it said “just add water,” but I thought, nah, I can do better than that. I wanted these pancakes to be extra special, you know?
First, I measured out one cup of the Aunt Jemima mix into a big bowl. Then, I cracked one egg into a separate smaller bowl, gave it a quick whisk, and then poured it in with the mix. Now that should give it a good taste.
Next, instead of just using water, I decided to use a mix of 1/4 cup of milk and 1/4 cup of water. I’d read somewhere that milk can make pancakes fluffier, so I was all for that. I poured that in with the mix and egg. Oh, and I also added a couple of tablespoons of melted butter into the batter. Because, why not? Butter makes everything better!
I stirred everything together until it was all nice and combined. The batter looked pretty good, not too thick, not too runny. Then I heated up my old, trusty frying pan on the stove and put a little bit of butter in there to grease it up.
Once the pan was hot, I poured about 1/4 cup of batter for each pancake. I let them cook for a few minutes until I saw bubbles forming on the top, then I flipped them over and cooked the other side until they were golden brown. They were looking pretty good, if I do say so myself.
I kept going until I used up all the batter, and ended up with a nice stack of pancakes. I topped them with some more butter and a generous drizzle of syrup.
And let me tell you, those pancakes were delicious! They were fluffy, flavorful, and just the right amount of sweet. Definitely way better than just adding water to the mix. So, if you’re ever making Aunt Jemima pancakes, I highly recommend adding an egg, some milk, and melted butter. It really takes them to the next level!
