I’ve always been a huge fan of banana pudding. That creamy, dreamy dessert with layers of vanilla wafers, fresh bananas, and sweet pudding just hits the spot every time. But lately, I’ve been trying to cut out gluten and dairy, which put a real damper on my banana pudding enjoyment. So, I rolled up my sleeves and got to work in the kitchen, determined to create a version that I could enjoy without any tummy troubles.
First, I gathered all my ingredients. I needed to find some substitutes for the usual suspects. I grabbed a box of gluten-free vanilla wafers. They weren’t as easy to find as the regular kind, but I tracked them down at my local health food store. If you really can not get it, you can try graham crackers with a little bit of cinnamon powder.
Next up was the dairy-free part. For the milk, I used unsweetened almond milk, but I’m sure any non-dairy milk would work just fine. Coconut milk might give it a nice tropical twist, but I did not try. As for the pudding, I made a simple homemade vanilla pudding using the almond milk, some cornstarch, sugar, and a touch of vanilla extract. I cooked it all on the stovetop until it thickened up nicely.
Assembling the pudding was the fun part.
- I started with a layer of the gluten-free vanilla wafers at the bottom of my dish.
- Then, I sliced up some ripe bananas and arranged them over the wafers.
- After that, I poured a generous layer of the dairy-free pudding over the bananas.
- I repeated these layers a couple more times until I reached the top of the dish.
I popped the whole thing in the fridge for a few hours to let it chill and set. I have to say, it was tough to wait, but I knew it would be worth it.
Finally, the moment of truth arrived. I took the pudding out of the fridge, scooped out a big serving, and took a bite. Oh my goodness, it was heavenly! The wafers had softened up just the right amount, the bananas were perfectly sweet, and the pudding was smooth, creamy, and delicious. It tasted just like the real deal, but without any of the gluten or dairy. I was so proud of myself!
This dairy-free, gluten-free banana pudding was a total success. It’s definitely going to be a regular dessert in my house from now on. If you’re looking for a tasty treat that won’t upset your stomach, give this recipe a try. You won’t be disappointed!
