Okay, so, today I wanted to try making something I’d seen around a lot lately – this Peruvian chicken soup called Aguadito de Pollo. I’m no chef, but I do love a good, hearty soup, especially when it’s cold out. Plus, it looked pretty easy, which is a big plus for me.
First things first, I gathered all my ingredients. I grabbed some chicken pieces – I think they were thighs and drumsticks – from the fridge. Then, I chopped up some onions, garlic, and a bell pepper. I also found some potatoes and carrots in the pantry, so I peeled and diced those up too. Oh, and I picked up some fresh cilantro from the store earlier – that’s apparently a big deal in this soup.
Next, I heated up some oil in a big pot and tossed in the chicken. I browned the chicken on all sides, just to get a bit of color on them. After that, I took the chicken out and set it aside for a bit.

In the same pot, I threw in the onions, garlic, and bell pepper, and cooked them until they were soft. I added some spices then – I think it was cumin, turmeric, and some chili powder. It already smelled amazing at this point.
Then came the blending part. I took about half of that cilantro I bought, some spinach that I also had, and a bit of the broth that I made from boullion cubes earlier, tossed it all in my blender, and whizzed it until it was all smooth and green. It looked kind of like a healthy smoothie, to be honest.
- Add the blended cilantro mixture to the pot.
- Pour in the rest of the chicken broth.
- Return the chicken to the pot.
- Add the potatoes and carrots.
- Bring everything to a boil.
- Lower the heat and let it simmer until the chicken was cooked through and the veggies were tender.
Once everything was cooked, I stirred in the rest of the chopped cilantro, and that was it! I ladled the soup into bowls, and honestly, it looked pretty darn good for something I just whipped up.
The Verdict
This Aguadito de Pollo was a winner! It was surprisingly easy to make, and the flavors were just incredible. The chicken was tender, the veggies were soft, and that cilantro-spinach blend gave it this amazing, fresh kick. It was like a warm hug in a bowl. Definitely making this again, maybe next time I’ll even try adding some rice like I saw in some pictures. I highly recommend giving this soup a try, even if you’re not a pro in the kitchen.
