Okay, folks, let’s dive into my little culinary adventure today. I decided to whip up some fried fish and over-easy eggs, Chilean style!
Getting Started
First things first, I gathered my ingredients. Nothing fancy, just what I had on hand:
- Some white fish fillets (I used cod, but whatever you’ve got works)
- A couple of eggs
- Flour, just plain ol’ all-purpose
- Salt and pepper (gotta have the basics!)
- Some oil for frying (I used vegetable oil)
- Optional: A little bit of merken, if want some chilean taste.
The Fish Frying Process
I started by patting the fish fillets dry with a paper towel. Gotta get that excess moisture off for a good fry. Then, I seasoned them generously with salt and pepper, cause why not, and that merken.

Next, I dredged each fillet in the flour. Just a light coating, you know? Nothing too heavy. Shook off the excess flour, too.
Then, into a hot pan they went! I poured in enough oil to coat the bottom of the pan and heated it up over medium-high heat. Once it was shimmering (not smoking, though!), I carefully placed the fish in the pan. Don’t overcrowd it, or the fish will steam instead of fry.
I let them cook for about 3-4 minutes per side, until they were golden brown and crispy. You want that nice color, that’s where the flavor is!
Once they were done, I removed them from the pan and placed them on a plate lined with paper towels to drain off any extra oil.
Egg Time!
For the over-easy eggs, I wiped out the pan (didn’t want any fishy bits in my eggs) and added a little more oil.
I cracked the eggs directly into the pan, being careful not to break the yolks. That’s the whole point of over-easy, right? That runny yolk!
I cooked them for about 2-3 minutes, just until the whites were set but the yolks were still nice and runny. Then, I carefully flipped them over for just a few seconds, maybe 10-15, to cook the top of the yolk just a tiny bit.
Putting It All Together
And that’s it! I plated the fish and eggs, side by side. Maybe threw on a little extra salt and pepper, depends the flavour you like.

It was a simple, satisfying meal. Nothing too complicated, but sometimes that’s just what you need. Hope you give it a try!
