Okay, so I’ve been on this butternut squash soup kick lately. It’s, like, the perfect fall food, right? But I quickly realized that eating it by itself gets old fast. So I started experimenting with what to serve with it. Here’s what I’ve been up to:
The First Try: Keeping it Simple
My first thought was, “Okay, soup needs bread.” Duh. So I grabbed a baguette from the store, sliced it up, and toasted it a little. I even drizzled some olive oil and sprinkled some salt on it.
- The Bread: Crusty baguette, sliced and toasted.
- The Topping: Olive oil and a pinch of sea salt.
It was good, don’t get me wrong. The crunchy bread was a nice contrast to the smooth soup. But it felt…basic. I needed something more.

Leveling Up: Adding Some Greens
Next, I thought about adding a salad. I wanted something that wouldn’t overpower the soup, but still had some flavor. I went with a simple spinach salad with a light vinaigrette.
- The Salad: Baby spinach.
- The Dressing: I whisked together some olive oil, balsamic vinegar, a little Dijon mustard, and a tiny bit of honey.
This was definitely better! The slight tanginess of the dressing cut through the sweetness of the soup. Plus, I felt healthier getting some greens in.
Getting Fancy: Cheese and Nuts
Feeling adventurous, I decided to try some more interesting pairings. The Cheesy route.
- Grilled Cheese:I used a sharp cheddar on sourdough. The sharpness of the cheese with that creamy soup? Amazing.
- Goat Cheese:I got a log and cut into small pieces.
so I crumbled some goat cheese on top of the soup. Tangy, creamy, perfect.
And, the Nuts route.
- Toasted nuts: I roughly chopped some walnuts and toasted them in a dry pan until they were fragrant. Sprinkled those on top. The crunch was awesome.
- Roasted Seeds: Roasted pumpkin seeds is a good try.
The Verdict?
Honestly, all of these worked pretty well! It really depends on what I’m in the mood for. The grilled cheese is my go-to for a comforting, hearty meal. The salad is great for a lighter lunch. And the goat cheese and nuts? Perfect for when I’m feeling a little fancy. I feel I did a great job, bravo!
