Alright, so the other day I got this mad craving for a meatball sub. You know, the kind with those juicy meatballs, smothered in tangy marinara sauce, all tucked into a soft, warm roll. Man, just thinking about it makes my mouth water! So, I whipped up a batch of my own, using my grandma’s secret meatball recipe. They came out amazing, if I do say so myself.
But then I realized, a meatball sub by itself is like, a party with only one guest. It needs some sidekicks, some buddies to make it a real feast! So I started digging around in my fridge, trying to figure out what would be the perfect match.
The Contenders
- Salad: I always have some salad stuff on hand. I considered making a simple green salad with some lettuce, tomatoes, and cucumbers. A classic for a reason, you know? But I wondered if it would be a bit too, well, boring next to a hearty meatball sub.
- Soup: Then I spotted some leftover tomato soup. Tomato soup and a meatball sub with tomato sauce? Seemed like a bit of an overload, right? I thought I should do something different.
- Veggies: Now we’re talking! I found some asparagus. Asparagus is my favorite side when I’m cooking at home. It’s easy to prepare, and tastes great!
- Chips: I mean, who doesn’t love chips? They’re easy, crunchy, and always a crowd-pleaser. But they felt a bit too casual, maybe even a bit lazy for this masterpiece of a sandwich.
So, after much deliberation, I decided to go with the sauteed asparagus. I grabbed the asparagus, washed them, and sauteed them until they were just right. The slight bitterness of the asparagus cuts through the richness of the meatball sub, and it adds a nice little crunch.

In the end, the meatball sub and the sauteed asparagus were a match made in heaven. The whole meal just felt complete, satisfying, and honestly, pretty darn gourmet. Next time you’re making a meatball sub, give sauteed asparagus a try. You won’t regret it! I promise!
