Okay, so I’ve been trying to find some good snacks that don’t send my blood sugar through the roof. My doctor told me I gotta watch it, you know, pre-diabetic and all that jazz. So, I went on a mission to find something that’s tasty, easy, and won’t make me feel like I’m sacrificing everything. I came across these “ball snacks,” and let me tell you, it’s been a game-changer.

My Experiment Begins

First, I hit up the grocery store. I was looking for stuff that’s low in carbs and high in, well, anything else good. I grabbed some nuts – almonds, walnuts, you name it. I also got some seeds, like chia and sunflower seeds. Oh, and unsweetened coconut flakes, because why not?

Mixing It Up

Then came the fun part, well, kind of. I threw all this stuff into a big bowl. I didn’t really measure anything; I just eyeballed it. I added some sugar-free peanut butter, the chunky kind because I like a little crunch. To bind everything together, I used a little bit of coconut oil, also no sugar added for obvious reasons.

Getting My Hands Dirty

Then I started rolling them into little balls, about the size of a golf ball, maybe a little smaller. You can make them bigger or small, it is up to you.

The Final Touch

I put these balls on a tray lined with, baking paper. Then I stuck them in the fridge for like, 30 minutes, just to let them firm up a bit. I guess you could pop them in the freezer if you’re in a hurry.

The Verdict?

And that’s it! Seriously, that’s all there is to it. They turned out pretty good! They’re crunchy, a little sweet, and definitely satisfying. Most importantly, they didn’t mess with my blood sugar levels too much. I checked, just to be sure. I’ve been snacking on these for a few weeks now, and I gotta say, I’m pretty happy with my little experiment. No more boring snacks for this guy!
