Okay, so the other day I was scrolling through my feed and stumbled upon this dish called “Samoan Spam Eggs and Rice”. It looked super simple and, honestly, kinda weird, but I was intrigued. I’m all about trying new things, so I decided to give it a shot. Here’s how it went down:
Gathering the Goods
First things first, I needed to get my ingredients. Luckily, it was nothing fancy. Here’s what I grabbed:
- Spam (of course)
- Eggs
- Rice
- Soy sauce
- Sugar
- Green onions (optional, but I like ’em)
Cookin’ the Rice
I started by cooking the rice. I have a rice cooker, so I just threw the rice and water in there and let it do its thing. You could totally cook it on the stove too, whatever works.

Spam Time!
While the rice was cooking, I opened the can of Spam and sliced it into, I don’t know, maybe 1/4 inch thick pieces? Not too thin, not too thick. Then I heated up some oil in a pan over medium heat and fried the Spam until it was nice and brown and crispy on both sides. This took maybe 5 minutes per side. I set the fried Spam aside on a plate lined with paper towels to soak up some of the grease.
Egg-cellent
Next up, the eggs. I just cracked a couple of eggs into a bowl, whisked them up with a fork, and poured them into the same pan I used for the Spam (less dishes!). I scrambled them until they were cooked through, but still a little soft. I like my scrambled eggs a bit on the runny side, you know?
The Sauce Situation
Okay, this is where the “Samoan” part comes in, I guess. In a small bowl, I mixed together some soy sauce and a little bit of sugar. I didn’t measure, just eyeballed it. I think it was maybe 2 tablespoons of soy sauce and like, a teaspoon of sugar? You can adjust it to your taste.
Putting It All Together
Once the rice was done, I scooped some onto a plate, topped it with the scrambled eggs and fried Spam. Then, I drizzled the soy sauce mixture over everything and sprinkled some chopped green onions on top. Boom! Done.
The Verdict
Honestly, it was surprisingly good! The salty Spam, the fluffy eggs, the slightly sweet soy sauce, and the rice all worked together. It was a super simple, quick meal, and I totally get why it’s a comfort food. It’s definitely something I’ll make again when I’m feeling lazy and want something satisfying. I mean, who doesn’t love Spam, right?
