Okay, so the other day I was making this killer stir-fry, right? And the recipe called for sambal oelek, which, you know, is that awesome chili paste that gives everything a nice kick. But guess what? My jar was empty. Totally scraped clean. Panic mode almost set in, because I was really craving that spicy, garlicky goodness.
Finding a Quick Fix
First things first, I rummaged through my pantry. Like, really dug deep. I was hoping maybe, just maybe, I had another jar hiding in the back. No such luck. Then, I checked the fridge, thinking maybe I’d been smart and prepped some extra. Nope. Zilch.
The Experiment Begins
So, I decided to get creative. I mean, how hard could it be to whip up a substitute? I grabbed my trusty little notebook (where I jot down all my kitchen experiments) and started brainstorming. I knew sambal oelek was basically chili peppers, garlic, vinegar, and maybe a little salt. I had all that stuff!

My go-to chili these moment is Red chili, so First, I minced some fresh red chili peppers. I’m talking finely minced, because nobody wants huge chunks of chili in their stir-fry. Then, I crushed a couple of cloves of garlic. The more garlic, the better, in my opinion.I added some vinegar.
- Fresh red chili peppers:2(cause I have a high tolerence to spicy food)
- Garlic: 3 big cloves
- Vinegar: 1/2 teaspoon (I used rice vinegar, ’cause that’s what I had)
- A pinch of salt
I put the mixture for a while and tried using a little bit of it with fried rice I have cooked the night before, my my, it’s not exacly the same, but it does give a spicy flavour and kick to the meal.
I tasted my concoction, and it was… pretty good! It definitely had the heat, and the garlic was coming through nicely. It wasn’t exactly like sambal oelek, but it was close enough.
I tossed my makeshift sambal into the stir-fry, and it worked like a charm. The dish still had that delicious spicy flavor I was going for. Crisis averted!
So, lesson learned: even if you’re out of sambal oelek, don’t freak out. You can totally make a decent substitute with stuff you probably already have in your kitchen. It might not be perfect, but it’ll definitely do the trick in a pinch!
