Alright, so I tried this thing I saw online – an egg bake, but with cottage cheese. I’m always looking for ways to get more protein, and honestly, I’m kinda bored with plain scrambled eggs.

Getting Started

First, I grabbed my stuff. I’m a simple person, so I use simple ingredients

  • Eggs – like, duh. I used six because that’s what fit nicely in my dish.
  • Cottage cheese – I went with the full-fat kind because, why not? It makes everything creamier. About a cup, give or take.
  • Some veggies – I chopped up some onions and bell peppers that I need to use them before they go bad.
  • Cheese– I just use cheddar cheese.
  • Salt and pepper – Keepin’ it basic.

Putting It All Together

First things first, I preheated my oven to 350 degrees Fahrenheit. While that was warming up, I sprayed a baking dish with some cooking spray. No one wants stuck eggs.

Then, I sautéed the onions and peppers in a pan with a little bit of butter. Just until they were soft, I dont want them to be too mushy.

Next, the fun part: I cracked the eggs into a big bowl and whisked them up. I’m not going for anything fancy, just making sure the yolks and whites are all mixed together. Then, I dumped in the cottage cheese and stirred it all up. It looked a little weird, but I trusted the process.

I added my sautéed veggies, salt, and pepper, and a handfull of shredded cheese to the bowl and gave it another good stir.

Bake Time!

I poured the whole eggy mixture into my prepared baking dish. Popped that bad boy into the oven and set a timer for 30 minutes. But, I know my oven. It’s a little… temperamental. So I checked it with a fork to make sure the center is no longer running.

The End Result

It looked pretty good! Golden brown on top, and it smelled amazing. I let it cool for a few minutes (important, so you don’t burn your mouth!), then cut myself a big slice. I am not a patient person.

And you know what? It was actually really good! The cottage cheese made it super creamy and fluffy, and the veggies added some nice flavor. Definitely a win in my book. I might even try adding some cooked sausage or bacon next time. Mmm, bacon…
