Okay, guys, so I’ve been cooking a lot lately, and one of my go-to recipes has been lemon pepper chicken. It’s easy, it’s tasty, and you can do a bunch of things with it. But I realized I was getting bored with my sides. Chicken is cool and all, but you gotta have some good stuff to go with it, right?

Then I thought, “Hey, I should probably eat some vegetables.” So I started messing around with roasted veggies. Tossed some broccoli, carrots, and bell peppers with olive oil, salt, and pepper, and roasted them in the oven until they were all caramelized and delicious. That was a win.

But sometimes, I wanted something a bit lighter and fresher. So, salads were the next thing to do. I made a simple salad with mixed greens, cucumber, and tomatoes, and a basic vinaigrette. Nice and refreshing, especially in this warm weather. I even made a pasta salad one time with some leftover cooked pasta, some chopped-up veggies, and a little bit of Italian dressing. Not bad, not bad at all.
Other Grains
- After that, I got a little adventurous. I cooked up some quinoa one night. I added in some black beans and corn too. I also made some couscous another time, which was super quick and easy. These were both pretty good with the chicken, gave it a different vibe, you know?
- Grilling is another great way to go. I grilled some corn on the cob and some asparagus, and those were fantastic with the lemon pepper flavor.
Honestly, it’s been fun trying out all these different sides. It really makes the lemon pepper chicken feel like a whole new meal each time. It’s all about mixing it up and finding what you like. The main thing I learned is that pretty much anything goes with chicken, so don’t be afraid to experiment!
