Okay, so I’ve always been a sucker for anything lemon-flavored, and lemon bars? Don’t even get me started. They’re, like, the perfect mix of tart and sweet. But sometimes, I just don’t have the energy to make them from scratch, you know? That’s where the good ol’ Duncan Hines cake mix comes in handy.

I decided to give this a whirl the other day, and let me tell you, it was a game-changer. First off, I grabbed a box of Duncan Hines Signature Lemon Supreme Cake Mix. You can’t go wrong with that, right?

Then, I softened about half a cup of butter. I just left it out on the counter for a bit until it was nice and squishy. I also grabbed one large egg and made sure I had some sour cream on hand to add some extra moisture.

I dumped the cake mix into a big bowl and added that softened butter. I mixed it all up until it was kind of crumbly. Then, I cracked in that egg and added a couple of spoonfuls of sour cream and mixed it again.

Mixing it up

I pressed about half of this mix into a greased baking pan. This was going to be my crust. I baked it for a little bit, just until it was slightly golden. While that was baking, I worked on the filling.

I used the rest of the cake mix, added a little more sour cream and mixed it with some lemon extract and sugar until it was all smooth and yummy. Once the crust was ready, I poured this lemony goodness right on top and baked it some more.

It took a bit of time, but the wait was worth it. The whole kitchen smelled like a lemon dream. I let it cool completely before cutting them into squares. And oh boy, were they good. Super easy, super tasty, and they definitely satisfied my lemon craving.

If you’re feeling lazy but want some killer lemon bars, you gotta try this out. It’s so simple, and the results are just chef’s kiss. I might even try adding a little bit of almond extract next time, just to experiment. These lemon bars are a win in my book.
