Okay, so I’ve been seeing tri-tip all over my grocery store lately, and I finally caved and bought one. I’m pretty good at grilling the tri-tip itself (lots of practice!), but I always struggle with what to serve with it. I wanted something more exciting than just a plain old salad.

So, I started digging around for some ideas. I wanted something that would complement the smoky, rich flavor of the tri-tip. I played around with a few different things, and here’s what I came up with, this is my way to go!

Roasted Garlic Parmesan Potatoes

I love potatoes, any form, so roasted potatoes are good choice!

  • First, I grabbed some small red potatoes – about a pound and a half.
  • Then, I washed them and cut them into quarters. Smaller pieces cook faster, you know?
  • Next, I tossed them in a big bowl with a good glug of olive oil – maybe 3 tablespoons? – and a generous pinch of salt and pepper.
  • I also minced up a bunch of garlic, I really smashed up like 4-5 cloves, and threw that in too.
  • And the secret weapon: about 1/2 cup of grated Parmesan cheese. The real stuff, not the powdery kind! Toss everything to coat it well.
  • Finally, I spread them out on a baking sheet and roasted them in a preheated 400°F (200°C) oven for about 30-40 minutes. I flipped them around halfway through to make sure they got nice and crispy on all sides.

Simple Grilled Asparagus

  • I just took a bunch of asparagus and snapped off the tough ends.
  • Then, I drizzled them with a little olive oil, salt, and pepper. Super basic.
  • I threw them on the grill alongside the tri-tip for the last few minutes. You only need to grill them for like 5-7 minutes, until they’re tender-crisp and have some nice grill marks.

Putting It All Together

Once the tri-tip was rested and sliced, the potatoes were golden brown and crispy, and the asparagus was perfectly grilled, I plated everything up. The salty, cheesy potatoes and the slightly charred asparagus are the perfect buddies for that juicy, smoky tri-tip. My families love it, and I think it is really a simple and good match!

Honestly, don’t overthink it. Simple, good quality ingredients, cooked well, are always a win. And that’s the whole process I did!
