Alright, so I tried making potato salad today, and it turned out pretty good, I guess. I used Hellmann’s mayonnaise because that’s what I had at home, and it’s always been reliable for me.
First, I grabbed about 1kg of potatoes. I think they were those new potatoes, the firm ones, you know? I washed them real good and chopped them into bite-sized pieces. Then, I tossed them into a big pot of water and set it to boil.
While the potatoes were cooking, I started getting other stuff ready. I measured out roughly 200g of Hellmann’s. I like a good amount of mayo in my potato salad, not too dry, you get me? Oh, and I added a couple of tablespoons of Dijon mustard too. Not everyone likes it, but I think it gives it a nice little kick.

I kept checking on the potatoes, poking them with a fork now and then. You want them to be tender enough to break apart, but not turn into mashed potatoes. Took about 15 minutes, maybe a bit more.
Once the potatoes were done, I drained the hot water and put the potatoes back into the pot. At this point, I added some vinegar into the pot. I also threw in some chopped garlic and onions, and a handful of fresh parsley, all mixed together.
Then came the fun part. I dumped in the mayo and mustard mix and started folding it all in. I made sure every piece of potato got a good coating. I mean, that’s the best part, right?
After that, I covered the pot and stuck it in the fridge for a few hours. Let it chill, let the flavors get to know each other. That’s what I say, anyway.
Later, I took it out and gave it a taste. Not bad, not bad at all. It was creamy, had a little tang from the mustard, and the potatoes were just right. I shared it with my family, and they all seemed to like it.
