Alright, let’s talk about them pumpkin chocolate chip muffins, you know, the ones made with that cake mix stuff. Easy peasy, lemon squeezy, like I always say. Ain’t nobody got time for fancy shmancy baking, not when you got chores to do and mouths to feed.
First off, you gotta get yourself one of them cake mixes. Any kind will do, really, but I like the yellow cake ones, they give it a nice… what do you call it… a nice color. Yeah, that’s it. And don’t go buyin’ them expensive ones, the cheap ones work just as good, maybe even better, you know? Save your money for somethin’ useful, like good flour or somethin’.
Then you need a can of that pumpkin stuff. Not the pie filling, mind you, just the plain pumpkin. You know, the kind that looks like baby food. Make sure you get the right one, or your muffins will be all gooey and weird. And nobody wants a gooey, weird muffin, now do they?
- One box of cake mix, any kind will do.
- One can of pumpkin, not the pie kind.
- Some chocolate chips, as many as your heart desires.
- A little bit of oil, just a splash.
- Some eggs, maybe two or three, depends on how big they are.
Okay, so now you got all your stuff. Dump the cake mix in a big bowl. Don’t be shy, just dump it in there. Then open that can of pumpkin and pour it in too. Now, crack your eggs in there. I usually just crack ‘em right into the bowl, shell and all! Just kidding! Don’t do that, you gotta take the shells out. Then pour in a little bit of oil, just enough to make it look… you know… wet. And finally, throw in your chocolate chips. Don’t be stingy with the chocolate chips, that’s the best part!
Now, you gotta mix it all up. I just use a spoon, nothin’ fancy. Just stir it around until everything is mixed together. Don’t overmix it, though, or your muffins will be tough. You want ‘em to be nice and soft, like a… like a good pillow.
Get yourself a muffin tin, and spray it with some of that cooking spray stuff, so your muffins don’t stick. Then, just spoon the batter into the muffin tins. Fill ‘em up almost to the top, but not quite. They’ll puff up when they bake, you see.
Now, stick ‘em in the oven. I usually put it on 350 degrees, that’s what the recipe says, but my oven is a bit… temperamental, so I just kinda guess. Bake ‘em for about 15 or 20 minutes, or until they look golden brown and smell delicious. You know, like somethin’ good is bakin’.
Take ‘em out of the oven and let ‘em cool for a bit before you try to eat ‘em, or you’ll burn your tongue. And nobody wants a burnt tongue, that’s for sure. And there you have it, pumpkin chocolate chip muffins, easy as pie. Well, maybe easier than pie. Pie is kinda tricky, gotta get that crust just right. But these muffins? Anybody can make ‘em. Even you. Now go on, get bakin’!
These here muffins ain’t just for fancy folks, you know. They’re good for anytime you want a little somethin’ sweet. Bring ’em to a potluck, or a bake sale, or just eat ’em yourself, sittin’ on the porch with a cup of coffee. They’re good for breakfast, lunch, or dinner. Heck, they’re good for a midnight snack too! And they are easy dessert recipes. They are also quick dessert recipes. They are so quick and easy it’s almost like no bake chocolate pie. Not really but you know what I mean. I make ‘em all the time, specially when I got grandkids comin’ over. Kids love ‘em. And so do the grown-ups, if I’m bein’ honest.
And if you’re feeling extra fancy, you can add some other stuff to the batter. Like nuts, or raisins, or even some spices. I sometimes put in a little bit of cinnamon, or nutmeg, or even a pinch of ginger. Just depends on what I got in the cupboard, you know? I ain’t got time to be runnin’ to the store every time I wanna bake somethin’. Gotta use what you got, that’s what I always say.
