Okay, so, I’ve been trying to cut out gluten and dairy from my diet, which, let me tell you, is not easy when you love creamy soups. I used to just grab a can of cream of chicken soup from the store, but those are loaded with stuff I’m trying to avoid. So, I decided to take matters into my own hands and make my own.
First, I grabbed my ingredients. I got some vegetables, like potatoes, cauliflower, and carrots because I’d heard they can make things creamy. It sounded weird, but I was willing to try anything. I also got some chicken broth, which I figured was a no-brainer for chicken soup.
I chopped up all those veggies. It was a bit of a workout, honestly. But once they were all chopped, I threw them into a big pot and added the chicken broth. I let that simmer for a while until the veggies got all soft. This took a bit longer than I expected, but I just scrolled through my phone while I waited.
Next came the fun part – blending! I used my immersion blender, which is basically a magic wand for making soups creamy. I just stuck it in the pot and blended away until everything was smooth. It was actually kind of satisfying to see all those chunks disappear.
After blending, I seasoned the soup with some salt, pepper, and a few other spices I like. I also added in some cooked chicken that I had leftover from dinner the other night. It is “cream of chicken soup” after all!
Taste Test
- First Impression: Not going to lie, I was a little nervous to try it. But, wow, it was actually really good!
- Texture: Super creamy, even without any cream or milk. I couldn’t even tell it was made with vegetables.
- Flavor: It definitely tasted like chicken soup, but a much healthier and more flavorful version than the canned stuff.
Honestly, I’m kind of proud of myself. I made a gluten-free, dairy-free cream of chicken soup that actually tastes good! It’s way easier than I thought it would be, too. I can see myself making this a lot from now on. No more canned soup for me! I might even try making other creamy soups now that I know this vegetable trick.
Some people said they just eat cream of chicken soup in a bowl like regular soup. I did not add extra broth or milk or water, so I did not eat it like a bowl of soup. I added cooked chicken to it, and it is perfect for me!
