Okay, so I’ve been experimenting in the kitchen again, and this time it’s with marshmallow cream and cream cheese frosting. I’ve always loved a good cream cheese frosting, but I wanted to see if I could take it up a notch. I saw a bunch of different recipes online – some just mixed marshmallow cream and cream cheese, some had butter, some didn’t, and they all seemed to have different amounts of each ingredient. It was a bit of a mess, honestly.
So, I decided to just wing it. First, I let my butter and cream cheese sit out until they were nice and soft, like around 70 degrees. I chopped them up into smaller pieces to make things easier. Then, I grabbed my mixer and beat the cream cheese until it was all smooth. A few recipes I saw mentioned putting the bowl over ice water, but I didn’t need to do that this time.
Next, I threw in the marshmallow cream. Some folks online were melting theirs in the microwave for like 30 seconds, then stirring it up. I just used the fluff straight from the jar since I’d already opened it the other day. I dumped that in with the cream cheese and mixed it all up until it was combined.

Oh, and I also tossed in a little vanilla extract because, why not?
After that, it was time to frost! I scooped the frosting into a piping bag with a tip and went to town on some cupcakes. I swirled the frosting from the outside in, making a nice little peak on top. They looked pretty darn good if I do say so myself.
And the taste? Amazing! The marshmallow cream really does add something special. It’s like the perfect balance of sweet and tangy, and the texture is so light and fluffy. I don’t think I’ll ever make cream cheese frosting without marshmallow cream again!
