Okay, so I’ve been craving coconut cake lately, the kind with that super light and fluffy frosting. I didn’t want anything heavy like buttercream, so I thought, “Why not try using Cool Whip?” I mean, it’s already whipped, it’s sweet, and it’s got that nice, airy texture. Seemed like a shortcut worth exploring!

Mixing it Up

First, I baked my coconut cake layers. Used my favorite recipe, nothing fancy, just a good ol’ reliable one. While those were cooling, I got to work on the frosting experiment. I grabbed a tub of Cool Whip from the freezer – make sure it’s thawed, but still cold! You don’t want it to be all melty and liquidy.

I scooped the Cool Whip into a big bowl. Now, for some extra flavor and to make it a bit more “frosting-like,” I decided to add a few things.

I repeated that with the second layer, then I put the whole cake in the fridge for about 30 minutes. Just to let everything firm up a bit. This Cool Whip frosting is definitely softer than buttercream, so chilling it helps it hold its shape.

The Verdict

It’s good and super easy! It is holding up pretty well. The flavor is light, sweet, and definitely * cream cheese gave the frosting more body and substance.
