Okay, so the other day I was craving something fresh, but also kinda hearty, you know? I had some leftover cooked chicken in the fridge and I was like, “What can I do with this?” Then it hit me – a strawberry chicken salad! I’d seen some recipes online, but they all seemed a bit… fussy. I wanted something simple and delicious. So, I decided to just wing it, and honestly, it turned out amazing!

Getting Started

First, I grabbed that cooked chicken. I think it was roasted, but grilled or even rotisserie chicken would work great. I just shredded it up with a couple of forks. You could dice it too, whatever you prefer.

Then, I washed and sliced a bunch of fresh strawberries. I mean, the more the merrier, right? Strawberries are the star of the show here! I also chopped up some celery for a little crunch. I’m not a huge fan of raw onions, but if you are, a little red onion would probably be good in this too.

The Pecan Power

Now, for the fun part – the pecans! I love pecans. I had a bag of pecan halves, so I just roughly chopped them. You could toast them for extra flavor, but honestly, I was too lazy. It was still delicious without toasting.

Making the Dressing

For the dressing, I wanted something light and tangy. I didn’t have any fancy vinaigrette, so I just whisked together some mayonnaise, a little bit of honey, and a splash of apple cider vinegar. You could totally use lemon juice instead of vinegar. I just eyeballed the amounts until it tasted good – a little sweet, a little tangy, you get the idea.

Putting It All Together

  • I threw the shredded chicken, sliced strawberries, chopped celery, and pecans into a big bowl.
  • Then, I poured the dressing over everything and gently tossed it all together until it was nicely coated. Don’t overdo it, you don’t want it to get soggy.

The Finished Product!

And that’s it! Seriously, it was that easy. I served it on a bed of mixed greens, but you could also eat it as a sandwich or with crackers. It was so good – the sweetness of the strawberries, the crunch of the pecans, the creamy dressing… perfection! Definitely making this again. It’s the perfect summer salad, super easy and super tasty. I might try adding some feta or goat cheese next time, for an extra layer of deliciousness!
