Okay, so I tried making a pasta salad with apple cider vinegar today, and let me tell you, it was quite the adventure. I started by gathering all my ingredients. I had some rotini pasta, a bunch of fresh veggies like bell peppers, cucumbers, and cherry tomatoes, and of course, the apple cider vinegar. I also grabbed some olive oil, herbs, and spices from my pantry.
First, I cooked the pasta according to the package directions. While the pasta was boiling, I chopped up all the vegetables. I like my veggies in bite-sized pieces, so I made sure they were not too big. Once the pasta was done, I drained it and rinsed it under cold water to cool it down. This helps keep the pasta from sticking together and gives it a nice texture for the salad.
Mixing it all up
- In a big bowl, I combined the cooked pasta and the chopped veggies.
- Then, I started working on the dressing. I poured some apple cider vinegar into a smaller bowl. I’d say it was about a quarter cup, but I just eyeballed it, to be honest. I added about the same amount of olive oil, maybe a bit more because I like that smooth, rich taste.
- To the vinegar and oil, I added some dried oregano, basil, a pinch of salt, and some black pepper. I also threw in a little bit of garlic powder because, well, who doesn’t love garlic?
- I whisked everything together until it was well combined. The dressing looked a bit cloudy, but that’s totally normal.
I poured the dressing over the pasta and veggies, and then I gently tossed everything together. I wanted to make sure every piece of pasta and every veggie was coated with that tangy, herby goodness.

After mixing, I covered the bowl and put it in the fridge. I let it chill for about an hour. I think chilling it really helps the flavors meld together. Plus, a cold pasta salad is just so much more refreshing, you know?
When it was time to eat, I gave the salad another good toss. I served it up, and it was delicious! The apple cider vinegar gave it a nice, tangy kick, and the veggies were crisp and fresh. It’s definitely a recipe I’ll be making again. Maybe next time I’ll try adding some feta cheese or some grilled chicken to switch things up. It’s such a simple dish to put together.
