Okay, so I saw this recipe floating around for lemon cookies using cake mix and something called “gooey butter,” and I was like, “What the heck, let’s give it a shot!” I’m no professional baker, but these looked easy enough, even for me.

Getting Started

First things first, I gathered my ingredients. I grabbed a box of lemon cake mix – I used the brand, it was on sale, so, you know, score! – some eggs, a stick of butter (make sure it’s softened, trust me!), and some cream cheese. Oh, and powdered sugar, can’t forget that!

Mixing It Up

I dumped the cake mix into a big bowl. Then, I added the softened butter and cracked in the eggs. I used my electric mixer for this part because, let’s be honest, I’m lazy. I mixed it all up until it was nice and combined. It looked pretty much like, well, cake batter. Don’t eat yet, resist the urge!。

The Gooey Part

In another bowl, I put the softened cream cheese, and add one egg into it, beat it with the mixer until smooth, and I gradually add the powder sugar and mixed until smooth.

Forming and Baking

Then I take about 1/2 of the cream cheese mixture and added to the batter, mixed again, then pour the batter into the cream cheese mixture bowl, and mixed well.

I preheated my oven to 350 degrees Fahrenheit. While that was heating up, I rolled the dough into little balls. I made them about an inch, maybe a bit bigger, because I like my cookies substantial, not those tiny, sad ones. Then, I rolled each ball in powdered sugar. This part was a little messy, but kind of fun, like playing with edible Play-Doh.

I placed the powdered sugar-covered balls onto a baking sheet. I didn’t grease it or anything, and they turned out fine. I baked them for about 10-12 minutes. You want the edges to be just slightly golden, but the centers still a bit soft. That’s the “gooey” part, I guess!

Cooling (and Sneaking a Taste)

I took the cookies out of the oven and let them cool on the baking sheet for a few minutes. They were super soft when they first came out, so don’t try to move them right away, or they’ll probably fall apart. After a few minutes, I transferred them to a wire rack to finish cooling completely.

I couldn’t resist, Then sprinkled extra power sugar on top of it. I snuck one while they were still a little warm. And, oh man, they were good! Lemony, sweet, and definitely gooey. Success!
