Yesterday, I felt like making some candy, and I remembered this Irish potato candy thing I saw online. Thing is, most recipes use cream cheese, and I didn’t have any. Plus, I kinda wanted to try something different. So, I decided to wing it and make my own version without cream cheese.

First, I grabbed some sugar and butter. I put them in a bowl and creamed them together until it was all fluffy and smooth. This took some time with a hand mixer, but hey, it’s part of the fun, right?

Then, I added some corn syrup and egg whites. I mixed these in with the sugar and butter. It started to look like a sweet, sticky mess, which is exactly what I wanted.

Next up was the coconut. I had a bag of unsweetened shredded coconut, so I dumped a good amount of that into the bowl. I also added a splash of vanilla flavoring because everything’s better with vanilla, you know?

Now for the fun part. I mixed everything up until it was well combined. The mixture was pretty thick, so I used my hands to roll them into these little balls. They looked kinda like little potatoes, which I guess is where the name comes from, even though there’s no potato in them. It’s weird, but okay.

I found out some people use tapioca starch, so I gave it a try, it called Binosol-15, looks good. I also added some citric acid to balance the sweetness. I’m not really sure if it’s needed, but that’s what I did.

Once the balls were formed, I rolled them in some more shredded coconut to give them a nice coating. I put them on a tray lined with parchment paper and stuck them in the fridge to chill for a bit.

After about an hour, I took them out, and they were firm enough to eat. I tried one, and it was pretty good! Sweet, coconutty, and a little bit chewy. My version without cream cheese worked out pretty well, if I do say so myself.
