Okay, so the other day I was craving something hearty, cheesy, and meaty, and I stumbled upon this “Texas Trash Dip” thing. I’d never made it before, but it looked pretty straightforward, so I figured, why not?
Getting Started
First, I grabbed my ingredients. I needed:
- Ground beef (I used about a pound)
- Cream cheese (two blocks, because why not?)
- A can of refried beans
- A can of Rotel (diced tomatoes and green chilies)
- Shredded cheddar cheese
- Taco seasoning (I just used a packet)
- Some sour cream (for topping, optional, but good)
- Chips, for dippin’, obviously.
Cooking it up
I started by browning the ground beef in a big skillet. I just cooked it over medium heat until it wasn’t pink anymore, then drained off the extra grease.
Then, I sprinkled in the taco seasoning and stirred it all up, making sure the beef was nicely coated.
Next, I threw in the cream cheese. I cut it into cubes first to make it melt easier. I kept stirring until the cream cheese was all melted and mixed in with the beef.
After that, I added the can of refried beans and the Rotel. I didn’t drain the Rotel, I just dumped it all in, juice and all. More stirring!
Once everything was heated through and combined, I sprinkled a generous layer of shredded cheddar cheese on top.
I stuck the whole skillet under the broiler for just a couple of minutes, until the cheese was bubbly and melted and starting to brown a little. You could also bake it in the oven, but the broiler is faster.
Chow Time
I pulled it out of the oven, and it looked amazing! All that gooey, cheesy, meaty goodness.
I let it cool for a few minutes (important, so you don’t burn your mouth!), then dolloped some sour cream on top.
Finally, I grabbed a bag of tortilla chips and dug in. It was seriously delicious. Warm, cheesy, a little spicy, and perfect for a party or just a night in watching movies.

It was simple, total comfort food. I’ll definitely be making this one again.
