Okay, so the other day I was looking through my pantry and saw a can of Libby’s pumpkin pie mix. Now, I’ve used their pumpkin puree before to make bread, but I’ve never tried it with the pie mix. I figured, why not give it a shot? It’s already got all the spices and stuff, so it might even be easier.
Getting Started
First things first, I preheated my oven to 350°F (175°C). While that was warming up, I grabbed two 8 x 4-inch loaf pans and greased them up real good. Gotta make sure that bread doesn’t stick!
Mixing the Dry Ingredients
Next, I took out a big bowl and tossed in the dry ingredients. I used:
- 1 ⅔ cups of all-purpose flour
- Some sugar – you know, to make it sweet
- Baking powder and baking soda, for that fluffy rise
- A pinch of salt to balance the flavors
I whisked all of that together until it was nicely combined. Pretty standard stuff for baking, really.
Adding the Wet Ingredients
Now for the star of the show – that can of Libby’s pumpkin pie mix. I dumped the whole thing into the bowl. Since this mix is already seasoned, I didn’t bother adding any extra spices. I also added some oil and a couple of eggs to the mix.
Combining Everything
I mixed everything together, being careful not to overmix. You just want to get it combined enough so there are no big lumps of flour. Then, I divided the batter evenly between the two greased loaf pans.
Baking Time
Into the oven they went! I set a timer, but I didn’t write down how long because baking times can vary. I just kept an eye on them and took them out when a toothpick inserted into the center came out clean. It was probably around 50-60 minutes, give or take.
Cooling and Tasting
Once they were done, I let the loaves cool in the pans for about 10 minutes before flipping them out onto a wire rack to cool completely. It smelled amazing in my kitchen, let me tell you! I waited (impatiently) for them to cool, then sliced into one.
The Verdict: It was actually pretty good! The texture was moist and the flavor was definitely pumpkin-y. Using the pie mix did save a bit of time since I didn’t have to measure out all the spices. Overall, I’d say it was a successful experiment. If you’ve got a can of Libby’s pumpkin pie mix lying around, give it a try! You might be pleasantly surprised.
